Cacao Date-Night Bloom Bombs

Hello, Spring! This fresh, new season and all of the Easter candy everywhere inspired me to create some new treats! Introducing “Bloom Balls” (I love alliteration)! I have a deep, deep, DEEP love for chocolate, and the fact that cacao is a superfood…absolute perfection! These blissful little bites pack big flavor and 7 epic ingredients to keep you happy and satisfied. They make great snacks to take on the go, or a sweet treat to follow your dinner. You can even wrap ‘em up in cute little bags, tie a bow, and have some fun favors to hand out at your next celebration! I was struggling with something to write about this week, but once I made a batch of these bad-boys, I knew it was meant to be. Better yet, all you need for this recipe is a big bowl, a few spoons, a fork, and a measuring cup. I’m away from home and don’t have a food processor (most of these types of recipes use one), so I made a way! Chocolate will always find a way!!!

Cacao Date-Night Bloom Bombs

Makes 10 balls


  • 1/2 cup almond flour from blanched almonds

  • 6 pitted dates

  • 2 TBS cacao powder

  • 1/2 cup crushed walnuts (consistency should range from flour to rice sized bits)*

  • 1 tsp sea salt or pink Himalayan salt

  • 1 tsp cinnamon

  • Shredded coconut for rolling

* As I said earlier, I don't have a food processor. I buy my walnuts in the bulk section at the grocery store, so they are in big pieces. To mash them, you can either put them into a ziplock bag and then CAREFULLY smash with something blunt and heavy; I just put them in a bowl and used my big glass measuring cup to smash them by pressing down and rotating the cup. Make sure that you measure 1/2 cup of crushed walnuts, not when they're in big pieces.


  1. Pit your dates, if you have not already done so. Heat up some water until almost boiling and pour over dates to soften. Let sit.

  2. Pour almond flour, walnuts, cacao, cinnamon, and salt into a big bowl.

  3. Empty the water from the dates leaving only a bit at the bottom, and place dates + bit of excess water into a smaller separate bowl. Using a fork, mash the dates into a paste. Drain any excessive liquid. There should be no lumps. The dates should all be smashed together and the consistency should resemble a jelly or thick fudge.

  4. Empty date paste into the larger bowl with the rest of the ingredients and use a big spoon or your hands to incorporate everything together! A thick dough should start to form. Make sure it’s well mixed and see if you are able to form small balls that stay together.

  5. Roll 10 bloom bombs that are slightly smaller than an EOS chapstick, or 1 inch in diameter. Shake the shredded coconut onto a plate and roll each ball into the coconut, evenly coating the surface. Store in a small container in the fridge, after eating a couple first of course.
